This is a triops, a three-eyed critter something like a trilobite (though it’s not actually one of those at all). From the Wikimedia Commons description:

This relic from the Devonian period has 140 legs, breathes through its feet, likes carrots, and its offspring can survive 20 years without water (the weather was a bit unstable back then).
